About the taste

Caffeine-free!
A sweet coffee with a creamy body. Its aroma features notes of cocoa powder, honey and caramel. Its soft acidity and long, pleasant aftertaste are reminiscent of maple syrup.

About the farm

Finca ChambakΓΊ is one of the farms that NOMAD collaborates with every year. Juan Felipe Restrepo (Pipe to his friends) brings us a new batch, this time a decaffeinated coffee made using the "sugarcane process" method.

Pipe decided to go one step further and opt for a natural process of decaffeination. It compensates for the characteristic sweetness generated by the decaffeination process with a pronounced fruitier acidity, creating a much more complex taste experience.

Process

The process is carried out using ethyl acetate from sugar cane. It is a selective solvent for naturally occurring caffeine. It is obtained by fermenting sugar cane. The coffee is then immersed four times in a mixture of water and acetate, which almost completely absorbs the caffeine from the coffee. Once this process is complete, the coffee is dried to a moisture content of 12.5% ​​and then covered with a layer of organic wax to protect it and keep it in its best form for longer.
